Portuguese barbecued chicken

Serves 4 as a main course
Preparation 10 minutes
Cooking 8 minutes

2 tablespoons olive oil
3 cloves garlic, finely chopped
1 tablespoon lemon juice
1 tablespoon mild paprika
½ teaspoon chilli powder
½ teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground allspice
8 small (800g) chicken thigh fillets
Lemon wedges, to serve

Combine olive oil, garlic, lemon juice and spices in a non-metallic container, add chicken and mix well to coat.

Cook chicken on an oiled barbecued plate for three to four minutes on each side or until tender, brushing frequently with marinade.

Serve with lemon wedges.

Lyndey’s note: you could marinade the chicken for up to 2 hours for intensify the flavor.
