Dip the rim of the cocktail glasses in melted chocolate, then dip one half of the glass rim in desiccated coconut.

65 mls chilled vodka
4 sweet strawberries, sliced
15mls Fraise de Boise liqueur
65-80mls cranberry juice
2 mini lamingtons (2cm x 2cm approx.), to serve

  1. Muddle the vodka with the strawberries. Add a little crushed ice.
  2. Add the Fraise de Boise liqueur and cranberry juice, shake to mix.
  3. Pour into glasses. Skewer a mini lamington (about 2cmx2cm) and place over glass rim.
