Light and golden sweet treats, berry friands are sure to please all ages.

Ingredients

  • 185g butter, melted
  • 1 cup (100g) almond or hazelnut meal (ground nuts)
  • 6 egg-whites, lightly beaten
  • 1 ½ cups (250g) icing sugar mixture
  • ½ cup (75g) plain flour
  • 100g fresh berries e.g. blueberries, raspberries, small strawberries

Instructions

  1. Preheat oven to moderately hot 200°C
  2. Grease 12 oval or rectangular friand tins or a 12-hole muffin pan (1/3 cup/80ml capacity).
  3. Combine all ingredients except the berries in a medium bowl and stir to combine. Divide mixture evenly between the pans; sprinkle with berries.
  4. Bake for 25 – 30 minutes. Turn onto a wire rack to cool. Dust with icing sugar, if desired.
