Although these are called Tacos for Kids, with a few optional additions they suit the whole family. So it’s worth making a decent batch.

Ingredients

  • 2 tablespoons (40 ml) extra virgin olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 4 cloves garlic, finely chopped
  • 500g beef mince
  • 500g pork mince
  • 2 teaspoons cumin (optional)
  • 2 teaspoons paprika (optional)
  • 1 teaspoon chilli powder (optional)
  • 1 teaspoon dried oregano leaves (optional)
  • Salt and freshly ground black pepper
  • 440g can tomato puree or chopped tomatoes
  • 1 cup (250 ml) beef stock
  • 2 cups shredded lettuce
  • 1 ½ cups grated tasty or cheddar cheese
  • 2 avocadoes, peeled, stone removed and chopped
  • 1 – 2 large tomatoes, chopped
  • 2 packets taco shells and/or small soft tortillas

Instructions

  1. Heat a large non-stick frypan over low heat. Add oil and gently cook the onion to soften but not brown for 5 – 10 minutes, stirring frequently. Add the carrots and garlic, stir and cook for a few more minutes.
  2. Increase heat to high and add the pork and beef, stirring to break it up as you do with a wooden spoon. Keep doing this until the meat is browned all over. It will take several minutes.
  3. Add cumin, paprika, chilli and oregano leaves (if using) or they can be stirred in at the end after removing some of the mince mixture for kids if they don’t like spice. Add salt and pepper. Mix well and add tomato puree and beef stock. Mix well.
  4. Reduce heat to low and simmer for 15 – 30 minutes. Add some water if the mixture becomes too thick. Taste and add more seasoning if necessary.
  5. Meanwhile pre-heat oven to 150’C. Heat taco shells and/or soft tortillas wrapped in foil in the oven for 5 minutes.
  6. To serve: put bowls of lettuce, cheese, avocado and tomatoes on the table. Place taco shells and tortillas on a platter and let everyone make their own tacos. Enjoy!
