Forget chicken nuggets. These parmesan polenta chicken strips are more delicious, healthier and so simple to cook.

Servings: 4
Preparation Time: 5 minutes
Cooking Time: 10 minutes

Ingredients:
1/3 cup polenta
1/3 cup very finely grated Australian parmesan or Romano cheese
4 chicken fillets, cut into strips or chicken tenderloins (800g)
Plastic bag
Thai sweet chilli sauce to serve

Method

  1. Pre–heat oven to 200°C (180°C fan forced).
  2. Combine Polenta and Parmesan cheese together.  Toss the chicken pieces in Parmesan Polenta in a plastic bag.
  3. Place onto a baking paper lined tray and bake at 200°C for 10 minutes or until cooked and golden.
  4. Serve the parmesan polenta chicken strips with Thai sweet chilli sauce.

Lyndey’s Note

Substitute flattened chicken breast, veal or beef for schnitzel, or seafood. Shredded Parmesan and Romano cheese can be frozen in an airtight container for up to 1 month.
