Winter Orange Delicious Pudding
Lemon delicious has long been a family favourite but, when oranges are in season, why not make a Winter Orange Delicious Pudding – the fast and fabulous way? I like to beat the egg whites first, to ensure the bowl is clean, then use it for the batter.
Servings: 6 small or 4 medium
Preparation time: 10-15 minutes
Cooking time: 25-30 minutes
Ingredients:
60g softened butter
¾ cup (165g) caster sugar
2 oranges, zested and 100 ml juice from them
60 g self-raising flour
1 cup (250ml) milk
3 eggs, separated
Icing sugar, thick cream, or yoghurt, to serve
Method:
- Preheat the oven to 180’C. Grease 6 x 160ml ramekins, 4 x 250ml ramekins or 1 litre baking dish.
- Beat the egg whites in a very clean, dry bowl until stiff. Set aside.
- Beat together the butter and sugar until pale and soft, approx. 2 – 3 minutes. Depending on the size of your mixer, you may need to do this in a smaller bowl with a hand mixer. Briefly beat in the orange zest. Add the egg yolks one at a time, beating well between each addition. Slowly add the flour and milk and finally the orange juice.
- Gently fold one-third of the egg whites into the batter to lighten, then fold in the remaining egg whites.
- Ladle into prepared dishes in a baking tray and place on oven shelf. Half fill the tray with boiling water and bake for 20 – 25 minutes (depending on size) or until the top is golden. There should be a delicious “sauce” underneath the spongy top.
- Sprinkle with icing sugar and serve warm with thick cream or Greek yoghurt.
Lyndey’s Note: If you like you can add a tablespoon of orange marmalade to the batter.
