Roasted Asparagus and Truss Tomatoes

Whether you’re cooking brunch, lunch or dinner Roasted Asparagus and Truss Tomatoes are an easy and delicious accompaniment.

Serves 6
Preparation 5 minutes
Cooking 25 minutes

Ingredients:

3 bunches asparagus, trimmed
3 branches baby truss tomatoes on the vine
1 tablespoon extra virgin olive oil
Salt and pepper to taste

Method:

  1. Pre-heat oven to 160°C fan-forced.
  2. Place asparagus and tomatoes in a baking tray. Drizzle with oil, salt and pepper and roast in oven until asparagus is tender-crisp, about 20 – 25 mins.
